１年目の成果
日中はまだまだ残暑という感じですが
夜になると比較的過ごしやすくなりいよいよ食の秋到来！ワインの美味しい季節になりました♪
ワインリストを作成してからようやく一年が過ぎようとしている
出来上がった当初は約２００種類というかなりの種類でお客様に
ご案内できたのもつかの間に思いの他嬉しい悲鳴ではあるがあまりの出数に
三ヶ月も経つとすでに欠品の商品が出てしまった
自分自身レストランやバーでワインを注文した時
考えに考えて注文した物があれもこれも「申し訳御座いませんあいにく･･･」等
言われる事が多々ある、そんなリストは絶対に自分では作りたくないし作らずに今までこれた
しかし
今回のリストは正にそれになってしまい後から継ぎ足しでアイテム数を増やし
リストの存在感がまるでなしでたくさんのお客様にご迷惑と失望をさせてしまった事に深く反省しております
ただこの一年はたくさんのワイン業者さんに出会えた事に大変感謝しています
この一年目の守る事の出来なかった物に関してはなんとかしたいという気持ちが強く
まづはお客様のご要望に応えられるリスト作りに、ベストの状態でご提供できるように日々努力しております
仕上がりは１１月頃までには何とかしたいという思いではあります
後２ヶ月
いいワインリストが出来上がることに自分自身を信じていきたい。
